    Eggs, asparagus and smoked fish are a simple yet perfect combination that's delicious served any time of the day. For a vegetarian dish, omit the fish and replace the fish stock with vegetable.

    Ingredients 2 cups good-quality fish stock (anything too strong will overwhelm the delicate asparagus flavour) 200g asparagus, trimmed 50g butter 4 tbsp flour 250g skinned and boned smoked fish (we used trevally), flaked 3 tbsp finely chopped chervil 6 large eggs 6 tbsp cream
